Ideal for Valentine’s Day or to keep in your refrigerator or freezer when you get a chocolate craving. They’re SIMPLE to make – just six simple ingredients are needed. We’ll show you exactly how to make it!

What is the secret base of these truffles that makes them healthy? The SWEETPOTATO is the ultimate! Sweet potatoes are not only a silky base but also full of nutrition. (Vitamins A and C, biotin, B5, B6, B5, biotin, potassium)

Peel, chop, and steam the vegetables. Add melted dark chocolate to a Food Processor along with coconut oil, cacao powder, maple syrup, and sea salt.

The mixture is ready for rolling into truffles. It’s then rolled in cocoa powder and dipped into it to get that classic look.

Ingredients

One cup of sweet potato* (1 cup or 1/3 lb) cut into cubes measuring 1 inch.

Use 3/4 cup dark chocolate (as needed, ensure dairy-free // We like Enjoy life).

Coconut oil 2 Tbsp

Cocoa powder 2 Tbsp

Maple syrup 2 Tbsp

1/4 teaspoon sea salt

For Rolling

Cocoa powder, 1 Tbsp

Instructions

Cover the steamer basket with boiling water and place the sweet potato cubes in it. Steam until soft (it will be easy to poke a fork into), approximately 8 minutes.

While melting the coconut oil and chocolate chips, place the glass or metal bowl carefully on top of the saucepan with simmering water. Stirring occasionally with a spoon or spatula, heat until no lumps are left, approximately 5 minutes. In a microwave, you can melt it in increments of 20 seconds in a heatproof bowl. Remove from heat.

Add the sweet potatoes, chocolate chips, coconut oil, and remaining ingredients (cocoa, maple syrup, and salt) to a processor. Process until smooth.

Transfer the mixture into a bowl that can be frozen and allow it to set until firm enough to scoop, approximately 45-60 minutes. Place one tablespoon of cocoa powder into a small bowl. Set aside.

As soon as the mixture has firmed up, scoop out one tablespoon portions and roll them into balls with your hands (be quick so that they don’t get too soft!). Then, dip the truffles in the cocoa powder bowl and re-roll between your fingers (this will help to distribute powder evenly).

Enjoy right away, or let the truffles firm up in the fridge or freezer for 15 minutes. The best way to enjoy truffles is straight out of the refrigerator.

Keep leftover truffles in an airtight container in the fridge for up to 4 days or in the freezer for up to one month.
