This mac and cheese is a good one. It’s not your usual mac and cheese. This mac and cheese is combined with an easy homemade chili made from pantry ingredients. It combines two of your favorite comfort foods into a single-pot meal. This is a quick and easy meal that the whole family will enjoy. It’s hard to beat!
Ingredients
- Olive oil one tablespoon
- Two cloves garlic, minced
- One onion, diced
- 8 ounces of ground beef
- 4 cups chicken broth
- Can of diced tomatoes, 1 14.5 oz
- 3/4 cup canned white beans, rinsed and drained
- 3/4 cup canned kidney beans, rinsed and drained
- Chili powder, two teaspoons
- Cumin – 1 1/2 teaspoons
- To taste, add Kosher Salt and freshly ground Black Pepper
- 10 ounces elbow pasta
- 3/4 cup shredded cheddar cheese
- Fresh parsley leaves, two tablespoons
Instructions
- Over medium heat, heat olive oil in a large Dutch oven or skillet. Add the garlic, onion, and ground beef and cook for 3-5 minutes until it is browned. Crumble the meat while cooking. Drain excess fat.
- Stir in the chicken broth, tomatoes, and beans. Season with cumin, chili powder, and salt to taste. Stir in the pasta and bring to a simmer. Bring to a simmer and stir in pasta.
- Remove from heat. Cover with cheese, and cook until it melts (about 2 minutes).
- Garnish with parsley if you wish.
